1 Egg yolk
¾ cup plain oil (canola, rice bran etc.)
1 tsp Mustard
2 tsp White vinegar
To taste chipotle tabasco
To taste lemon juice
Add egg yolk to a mixing bowl and whisk in the mustard, vinegar and a pinch of salt, until combined. Now add the oil in tiny drops until about a quarter of the oil has been added, whisking continuously. You’ll notice that the mixture is beginning to thicken and emulsify - keep whisking and continue to add the oil in a slow and steady stream.
When all of the oil has been added, taste mayonnaise and add the chipotle tabasco. Taste again to make sure you have the right amount of tabasco for your taste. Adjust the seasoning with salt and lemon juice if needed.
Note: If the mayo seems too thin, slowly whisk in more oil or if it is to thick add a little hot water to thin it down.
